Ingredients
  

  • 1 package sheet puff pastry thawed if frozen
  • 8 oz Brie cheese sliced into small pieces
  • 1/2 cup cranberries fresh or frozen, thawed and drained
  • 1 tbsp honey optional, for drizzling
  • 1 tsp fresh thyme or dried thyme

Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Unroll the puff pastry sheet on a lightly floured surface and cut into 12 equal squares, about 1.5 inches each.
  3. Arrange the pastry squares on the prepared baking sheet, spacing them evenly.
  4. Place a small piece of Brie in the center of each pastry square, pressing slightly to settle.
  5. Top each with a teaspoon of cranberries, pressing gently to distribute evenly.
  6. Bake in the preheated oven for 12 to 15 minutes until the pastry edges are golden brown and the cheese is bubbling.
  7. Remove from oven and let sit for 2 minutes. Drizzle with honey and sprinkle fresh thyme over the top if desired.
  8. Serve warm directly from the baking sheet, enjoying the crispy, cheesy, tart bites with friends or family.

Notes

For extra flavor, add a sprinkle of dried herbs or a pinch of black pepper before baking. You can prepare these bites ahead and reheat in a warm oven for best crispness.
