- Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
- Unroll the puff pastry sheet on a lightly floured surface and cut into 12 equal squares, about 1.5 inches each.
- Arrange the pastry squares on the prepared baking sheet, spacing them evenly.
- Place a small piece of Brie in the center of each pastry square, pressing slightly to settle.
- Top each with a teaspoon of cranberries, pressing gently to distribute evenly.
- Bake in the preheated oven for 12 to 15 minutes until the pastry edges are golden brown and the cheese is bubbling.
- Remove from oven and let sit for 2 minutes. Drizzle with honey and sprinkle fresh thyme over the top if desired.
- Serve warm directly from the baking sheet, enjoying the crispy, cheesy, tart bites with friends or family.
